Tomorrow is my first day of 7th grade. I have prepped a chicken “zoodle” soup for my lunch tomorrow. The recipe is from the recipe book Spiralize It! by Kenzie Swanhart. It uses spiralized zucchini noodles instead of flour noodles. It has onions, carrots, chicken, and celery other than the noodles. I seasoned it with dried basil, dried oregano, dried parsley, and sea salt and black pepper. It will cook on low in the slow cooker for about 7 hours with chicken broth, apple cider vinegar, and water. I’m excited to pair it with a side of fruit tomorrow for my first lunch of the school year!
I have also prepared an oatmeal cup for breakfast tomorrow morning. All you have to do is make a batch of oatmeal, either on the stovetop or in the microwave, and top it off with your favorite toppings. I love to put cinnamon and blueberries in mine. You can mold them in a cupcake mold in the freezer and then heat them up in the mornings. I like to serve them with scrambled eggs on the side. You can make a whole batch in the beginning of the week and have your breakfast prepared every day!
