Ratatouille

I watched the awesome Disney movie, Ratatouille, today. It inspired me to make none other than ratatouille! I kind of made up my own simple recipe with ingredients that we already had. I diced up some cherry tomatoes and boiled them down with white onion, olive oil, salt, pepper, dried oregano, basil, thyme, and parsley leaves, and garlic. I layered that in a pan with diced squash, eggplant, and carrots and baked it for 20 minutes. It could’ve gone a little longer in the oven, probably about 10 minutes or so. I grated some goat cheese on top, and it was delish. I will definitely make this again.
