Squash and Apples

Today was roasted squash and apples for lunch. Sounds like fall to me! Last night, after eating an awesome cod dinner, my mom and I prepared a roasted squash and apple dish. Squash and apples pair really nicely with their many differences and similarities in taste. We had a carnival squash and some apples from our tree, so we made a recipe that we’ll definitely make again.

We roasted the squash, tossed in olive oil, salt, and pepper, in the 400 degree oven for about 25 minutes. We did the apples, tossed in a small amount of cinnamon, separate for about 20 minutes. The cinnamon adds a spicy, sweet flavor to the whole dish that brings it together surprisingly nicely. We mixed everything up with some dried thyme and voila! It tasted great served over fresh spinach with a drizzle of olive oil. Sweet and savory is a really awesome flavor combination.
