My mom prepared the squash lentil soup mix tonight for dinner when I was at cross country practice. It was an awesome surprise when I got home. It was a perfect night for soup because of the chilly fall weather.
The butternut squash tasted so good with the lentils. It had an orange flavor to it as well, because there was dried orange peel in the mix ingredients. It added a really nice flavor. I’m glad we got so many packages of this soup mix, because it was so tasty. Leftovers for lunch tomorrow!
