My school had a day off today. The weather was rainy, and I stayed inside. I cooked two wonderful meals that were perfect for a wonderful day.

We’ve had a spaghetti squash laying around for awhile, so tonight for dinner I made a spaghetti squash dish. I kind of just made it up as I went along. I roasted some broccoli, cauliflower, and carrots in the oven with the spaghetti squash. All of that was seasoned with olive oil, salt, pepper, dried basil, oregano, parsley, and thyme. I made a play on chimichurri sauce with cilantro, parsley, garlic, olive oil, lemon juice, green opinions, and salt and pepper. I tossed the sauce with the spaghetti squash and mixed in the roasted vegetables. It may not seem like a very coordinated dish, but it tasted amazing and was very satisfying.
