This morning, my mom and I prepped a mason jar salad for lunch. These have obviously been my most recent obsession. I’m so crazy about them that we found a recipe book all about mason jar salads. It’s called Mason Jar Salads and More by Julia Mirabella. It has recipes to 50 tasty layered lunches to grab and go. How awesome is that!?
We made the mixed greens with white bean salad from the book, today. It had a red wine vinaigrette on the bottom. A white bean salad made with herbs, cannellini beans, lemon juice, and red wine vinegar came next. Then came cucumbers and tomatoes. And to top it off, a few big handfuls of spring mix salad greens. It was the perfect balance of healthy protein and veggies, and to make it even better, it was served in a jar!
