The veggie and fruit trays were a big hit! I’m glad that they were appreciated. After the dance, I came home and made a brilliant dish for dinner.
It was my own personal pan frittata! I used 3 eggs, a dash of water, shredded provolone, salt, pepper, roasted red pepper, tomato, and kale. I threw it in the 350 degree oven for about 20 minutes. The kale got a roasted, crunchiness to it that was really tasty.
I think this would be an awesome way to serve someone in a restaurant. I would eat something served to me in the pan! I ate it so fast out of the oven, that I burned my mouth.
