Now That’s a Yolk



Pictured above, are two cracked eggs. The one on the right is an egg from our own chickens. The one on the left is a store bought egg.

As you can see, there is a big difference in the color of the yolks. Darker yellow or orange yolks mean there are more carotenoids. This usually means the hen had a varied diet. This results in the egg being richer in vitamins and omega 3.

There are many nutritional benefits to farm fresh eggs. They are lower in cholesterol and saturated fat as well. They also have a tougher shell. This makes them a pain to peel when they are hard boiled, but I definitely prefer farm fresh eggs.
