Whole Wheat Pancakes For One

IMG_0016.JPGMy pre-run breakfast this morning was whole wheat pancakes with a pear, honey, and cinnamon compote. It was SO good. If there’s a way to make pancakes healthy, of course I’m going to try it.

The recipe made about 4 medium pancakes that were so fluffy and wonderful.

1/2 cup whole wheat flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1/2 tablespoon coconut oil
1 teaspoon vanilla
1 egg
1/3 cup milk

This is definitely going to be my go to breakfast to get me pumped and ready for a run!
