Tonight for dinner my dad made barbacoa tacos. Barbacoa is a form of cooking meat that originated in the Caribbean. It generally refers to meats or whole sheep slow-cooked over an open fire. My dad made it in the crock pot. He used beef brisket.
We had the barbacoa prepared from a while ago. Tonight we had it on corn tortillas with a cucumber slaw, fresh romaine, and salsa. This is probably the 3rd time I’ve eaten tacos this week. There’s nothing wrong with that!
