Blanched Veggies

We had steamed vegetables with our dinner tonight. Steaming vegetables makes them soft and easy to digest. However, it also takes some of the nutrients out of the vegetables. A great way to easily digest vegetables with most of their nutrients is to blanch them. Blanching is kind of in between fully cooked and raw.

Put the vegetables into boiling water for 1-2 minutes. You don’t want them to cook for too long. Take the vegetables off of the heat and run them under cold water immediately to stop them from cooking. I like to normally fill the pot that I used to blanch the veggies 2-3 times with cold water and drench the vegetables.
