Lately, I’ve been trying to find healthier dessert recipes. Everyone deserves a treat and treats are even better if they’re good for you. I’ve seen recipes that use avacado as a fat before, but I’ve never actually baked with it.
Today I made chocolate avocado cookie bites. Here’s what I did:
In a food processor combine one ripe avocado, pitted and peeled, 1 egg, 1/2 cup chopped dates, and 1 teaspoon vanilla until mixture is smooth. Stir in 1/4 teaspoon salt, 1 teaspoon baking soda, 1/2 cup whole wheat pastry flour, and 1/2 cup cocoa. Be creative with add ins. I added in chopped almonds and dark chocolate chips. Bake on a lightly greased cookie sheet, or use a silpat mat, and bake for 8-10 minutes. Don’t over bake them, mine only needed 8 minutes at 350 degrees. Enjoy your healthy cookie bites!
