Basil Minestrone

My mom made the most delicious minestrone soup for dinner tonight. It was packed with vegetables and it was even paleo! It took 10 minutes to prep the vegetables and 30 minutes to cook. It was a basic chicken broth soup with vegetables. The basil flavor came from the blender. She puréed basil and olive oil in the blender and mixed it in the soup right before it was served. It was a very light, healthy soup. We served it over brown rice to make it more filling. My mom is the soup master!
