For dinner, I spiralized some sweet potatoes and made soodles! I got the recipe for ginger chicken sweet potato noodles from the paleo cookbook, One Pot Paleo by Jenny Castaneda. This is the source for most of my dad’s recipes.
Doesn’t it look yummy? It was super simple. I used 2 sweet potatoes, 2 cubed chicken breasts, and lots of vegetables. This was all simmered with chicken broth, coconut aminos, garlic, onion, ginger, black pepper, and toasted sesame oil. Garnished with toasted sesame seeds, this makes the perfect meal.
