Dinner tonight was almond crusted cod with carrot and beet salad. My dad is really good at making this dish. My favorite part is the olive tapenade that is spread over the fish. The almonds add a nice nutty flavor at well.
He baked the fish and boiled the vegetables. Parsley added a nice subtle flavor to the carrots and the beets. This is not only a tasty dish, it is attractive as well. So many bright colors are very appealing to the eye and the appetite. Happy Valentine’s Day everyone! I hope nobody went too crazy with the sweets.
