Breakfast Sandwich

This morning, I made a breakfast sandwich. I toasted two whole wheat English muffins. I smeared hummus on one half and avocado on the other. I stacked a fried egg, tomato slices, and some baby spinach in between. It was messy but very tasty. I’ll do anything to get an extra serving of vegetables into my day. I love putting spinach in my morning smoothies, veggies in an omelette, or having a breakfast sandwich like the one I had today.
