Lately, my go to meal has been roasted vegetables and chicken. It’s such a simple delicious dinner. The great thing is it all cooks at 400 degrees Fahrenheit!
I marinade the chicken in red wine vinegar, Dijon mustard, garlic, olive oil, dried herbs, salt, and pepper. I drizzle the vegetables with olive oil, garlic, salt and pepper. It all goes in the oven for 25 minutes. It’s as simple as that!
