Tonight, I had a Buddha bowl for dinner. A Buddha bowl is basically a grain bowl with vegetables, protein, and maybe a dressing. I think they can be really attractive and delicious.
I made a quinoa Buddha bowl. I sautéed some bells peppers and carrots. I threw in some chopped romaine, cucumber, and green onion. I fried two eggs to top it off and drizzled it with an olive oil, red wine vinegar, mustard, and garlic dressing.
