My Veggie Quesadilla

I made a vegetable quesadilla like the one I had in Portland! It was very comparably yummy. I cut up garlic, red onion, tomato, broccoli, and red pepper into very small pieces and roasted them with olive oil and dried herbs at 400 degrees Fahrenheit for about 10 minutes or until they were well done. I shredded goat cheese, sharp cheddar, and cheddar. I used the cheese, the veggies, turkey, and whole wheat tortillas to make the quesadilla. It paired really nicely with salsa and sour cream.
