Today I ran the YMCA Riverbank Run in Missoula, Montana. I ran the trifecta which was a 10k, a 5k, and 1 mile to top it all off. It was 10.3 miles all together. It was a heck of a day.
I found this runner’s recipe a while ago for lemon chia seed cookies. I thought it would be a great time to try them out. I used 1/2 cup coconut oil, 1/2 cup sugar, 1 cup of flour, 1/2 teaspoon baking soda, 1/8 cup plus 1 tablespoon chia seeds, and the juice and zest of one lemon. They turned out nice and crispy. I added a drizzle of chocolate. Perfect treat for after a long day of running!
