Last night, my mom made chia pudding. It is another Whole 30 recipe. I love to learn all of these new, healthy recipes.
She blended 2 bananas, 2 cups of almond milk, vanilla, cinnamon, and cocoa powder together. She then put this mixture in a jar with 1/3 cup of chia seeds and shook it up. It was left in the fridge overnight so the chia seeds could sort of coagulate. It was an interesting texture but it was extremely yummy. I ate some for breakfast with some added nuts for protein and berries. It would make a great, healthy dessert as well.
